Please, let me introduce myself. My name is Margaret-Mary Gillespie, "Chef Charlie", privileged owner and Chef of COTB!
My, our, parents (family of seven), taught us the meaning of family community. That "it" wasn't about us, "it" was and is about the people around us. Life is about the people that walk beside you, those who cross your path. Life is about creating memories, and if we are lucky enough to take part in those memories, those snap shots in time... OH MY!
Given the rare opportunity to learn from the best of the best local restaurateurs from my home town, Joliet, IL., recipes were whispered and held close to the heart.
They taught me the importance of tradition, patience and how to allow the food to come alive, "Give them a little push, but LET THEIR FLAVORS BE!"
Three day sauces with fresh tomatoes and basil from the garden, aged beef, working dough for the Breads, the Gnocchi, the Focaccia: That was all the therapy you needed.
I was blessed with amazing creators and mentors in the culinary world over my 35 years collectively in the private and corporate sectors;
I want to thank you all for the gift you have given me.
